Our head chef carefully selects and purchases only the most delicious ingredients of the season. In addition to going directly to the market and purchasing, we also order high-quality ingredients from all over the country. In spring, we have "Karatsu sea urchin" available. The rich richness and umami of this dish will leave you with an unforgettable taste. Reservations are required and available only at counter seats. We also recommend the Shari sushi made with Edomae original Shari vinegar that does not use sugar. Please try it.

The rice used is Noto Koshihikari from Ishikawa Prefecture. The rice, which is kept in a special storage facility in Ishikawa Prefecture, has the perfect texture for sushi. The sushi rice is cooked a little dry with the perfect amount of water, and the special shari vinegar is absorbed all at once. The Shari vinegar is a blend of Fuji Vinegar Premium and Red Vinegar Premium from Iio Jozo, a company specializing in high-quality vinegars. We also use additive-free soy sauce made using a method that does not use any chemical seasonings.
