Our soba noodles are crafted with a focus on the quality of the buckwheat flour. The most delicious state of soba is said to be "freshly ground, freshly made, and freshly boiled." Since buckwheat flour oxidizes during storage, we grind it daily using a stone mill set up in our shop. We then make the noodles on-site and cook them to order.

Every day, we meticulously prepare dashi both in the morning and evening without fail. This is because the flavor of dashi diminishes over time. We blend carefully selected ingredients, tailored to the region, including the rich and aromatic bonito, to create a dashi that is dedicated to authenticity. Our special dashi greatly enhances the deliciousness of the soba and udon dishes that Sagami takes pride in.
