The "Thigh Tataki" is made with female Akita Takahara Hinai Jidori chickens that have been raised for 154 days, and is characterized by its moist and rare texture. It is topped with grated daikon radish and accompanied by homemade yuzu pepper, which further enhances the flavor. Other attractions include "Awaji Chicken Liver Paste," which is made by carefully straining the liver of Awaji young chickens killed that morning, "Hinai Jidori Chicken Rillettes," and "Atsuage (fried tofu)" from Hara Shoten in Higashiyama Market.
