魚の頭や骨で出汁を取り、お味噌汁に活用しています。
最高級の食材や人気のある食材ばかりを求めることで、水産資源が枯渇してきているのは事実です。できるだけ、地元新潟で獲れる「アワダチ」や「フナベタ」といった未利用魚を積極的に寿司ネタとして使用しております。
今後、母子家庭や父子家庭のお子さんと親御さんに向けたお食事支援の活動などをしていきたいと考えているところです。
