The ingredients used are all natural, which the owner goes to the market every morning to purchase. We are particular about the temperature that allows each topping to taste its best, as well as the temperature of the shari. Toro (fatty tuna) takes a long time to develop its sweetness when it's cold, but by letting it come back to room temperature, it becomes the perfect consistency that blends well with the sushi rice. The shellfish is cooked at a low temperature to retain its texture. The temperature of the conger eel is carefully controlled so that it is cooked even more tender and fluffy. Since the owner used to work at a tea-related restaurant in Kyoto, the interior of the restaurant has a calming atmosphere reminiscent of a tea room, with tea utensils placed here and there. Please feel free to stop by and enjoy your meal without having to strain your shoulders while being surrounded by a comfortable and special atmosphere with only 8 seats at the counter.
