◆鯛のあら煮・・・あっさりした味わいで、しっかり締まった頭肉のおいしさを楽しめます。
特に一番おいしいとされるのが“目玉の部分”で、ゼラチン状のトロッとした食感♪
また、美味しい“頬の部分”は胴の部分の2倍ぐらい脂が含まれている上に筋肉がよく動いているため、
より味わいがあり、丁寧に煮付けされた身がホロリと柔らかく、優しい味わいです♪
一緒に煮付けされた牛蒡も、鯛の旨味が染み込んでいるので、柔らかくこれまた美味しい♪
◆アブラメのかぶら蒸し・・・かつおと昆布のダシとかぶらの甘みがアブラメにしみ込んだもの。
野菜の優しい甘みと旨み、ダシの味わい深いもので、体に染み渡っていく逸品です♪

鯛・蛸は明石海峡の激しい潮流でもまれ、
豊富なエサ(エビ・カニ・貝・プランクトン)に恵まれたもの。
身の引き締まり身質も良い極上品で、脂の乗りも最高のもの♪
蛸は立って歩くとも言われる筋肉質の身からなるプリプリな歯ごたえ!
食感も良く、濃厚で噛めば噛むほど滲む旨みが味わえます。
穴子はあっさりじんわりした甘みが特徴的!
天ぷらだと外はサクサク!中はふわふわ♪身の甘味がより引き立っている。
