飛騨古川産のプレミアム飛騨牛A5等級を扱う飛騨牛料理専門店です。
この日頂いたのは「飛騨牛ひつまぶし膳」で、鰻ならぬ牛を用いたひつまぶしです
当時はプレミアムフライデー限定で、通常価格は6,800円（税抜）が3,800円となりました
現在では何のありがたみも無い死語と化しましたが…
まずは余興としてサラダと、お肉がゴロゴロ入ったミネストローネ、そして口取り三種です
続く飛騨牛炙り寿司2貫は、ざぶとんロースという希少部位を使い、火加減はほんのりです
とろけるような舌触りで、その辺のなんちゃって牛寿司とは違います
そしてメインディッシュ、飛騨牛ひつまぶしの登場です
ここまでいろいろ食べてようやくひつまぶしですが、おひつは通常より小さめです
まずは定型通りそのままお椀で頂けば、柔らかく肉汁弾けるお肉と一粒一粒ふっくら炊き上がったお米の見事な調和
最高品質のプレミアム飛騨牛と南魚沼産コシヒカリの組み合わせは見事です
薬味が通常のネギ、ワサビ、ノリ以外にもいろいろと工夫されています
茶漬けにしてもお肉の旨味がよく出て贅沢な〆となります
未曾有の衝撃体験は、デザートのカキ氷に続きます
白雪氷と呼ばれるミルクたっぷりのジェラートをキメ細かく削ったような味付きのかき氷です
牛乳に練乳とココナッツなどを混ぜた後に凍らせ、圧縮砕氷して作るそうです
僕のように不思議に思うお客も多いらしく、お店では看板メニューの一つに挙がります
大げさではなく、コレだけのために来店する価値は十分にあります
店内の造りは上品さと風格を備え、和の半個室中心で、居心地良く過ごせます
これ以降も何回か訪れていますが、ランチタイムを外せばカフェ利用でも応じて頂けるので、甘味目当てでも大丈夫です
