Ippudo is now a nationwide chain serving Hakata Tonkotsu Ramen. I think it's my favorite Tonkotsu Ramen. I like Ichiran's taste as well, but I'm not a fan of the unique atmosphere inside the restaurant lol. At Ippudo, they always have Akamaru Shinmi Harigane. Bean sprouts, mustard takana, pickled ginger and garlic used to be placed on the table, but now they're in one place inside the restaurant and you have to go and get them yourself (maybe it depends on the store?). With the current labor shortage, it's more efficient to have the effort of checking and replenishing things in one place. You can also keep an eye on troublesome customers lol. I quite like Ramen, and the ramen is consistent in flavor, and goes well with the thin Harigane noodles. I couldn't help but order a second bowl. I like thick, chewy noodles, but the firm, crunchy texture of thin Tonkotsu noodles goes well with them. I didn't order them this time, but the Gyoza / Dumpling with yuzu kosho was also delicious.
