豚タンとほうれん草を使ったテリーヌ。
【鶏肉のハム】
鶏肉にハーブを巻き込んで、低温で調理したハム。
【鴨肉のパテ】
鴨肉とオレンジを使った、パテのパイ包み焼き。
以上3種類、食感の似た前菜ですが何れも美味しかったです。
中でも牛タンのテリーヌがgoodでした。

キウイのソースがかかっており、キャビアが乗っています。

ザブトンは、肩ロースのあばら骨側に位置する部位でサシがしっかり入っており、焼肉屋さんでは特上カルビや特上ロースとして提供しているところが多いようです。
つぶマスタードのソースがかかっています。
