今日は、少し前から計画していた母の大お暇デー。冬季はいよいよ旦那のオンシーズンが到来。まだ解禁されていないが、今後は前泊から好き放題されるのが目に見えている。それ故に、あいち旅が適応されている現在を狙って、こちらが先手を取らせて頂いた次第なので悪しからず。
かくして今回は休暇に関するフリー権を得られたので、1軒目に選出された当方。某サイト経由で予約して、定刻5分前には到着。外観やら東山タワー辺りを記念に撮って暇を潰しては、定刻入店を果たした。店内は記憶に新しいミュシャやロートレックのポスターがあちらこちらに見受けられて、好きな絵画に見守られつつランチメニューの黒板を見遣った。肉か魚かしばし迷いつつ、夜は肉系を想定していたのでひとまずランチでは魚にすべく「本日の鮮魚のソテー」を注文。
せっかくの拘りのディッシュであれば個々に説明があれば尚も嬉しいのだが、どうもオーナーは寡黙なタイプらしい。黙々と皿だけ出しては、直ぐに調理場へ引っ込まれてしまった。気を取り直して、料理内容を感じて知り得た範囲内で記載しておく。非常に洗練された味わいだったので、各々の皿で少しでも伝われば幸いである。
前菜の盛り合わせ(右回り)
・生ハムと柿とハム。
→間違いない組み合わせ。しっとりとやや厚めのカットハムも嬉しい。
・パテ×キャロットラペは、レーズの絶妙な甘みと酸味、ピクルスの塩味、サラミ風味のパテ。
→三位一体感が素晴らしい。
・カナッペ(鶏むね×ブロッコリーのタルタル風)カリカリのバケットと共に。
→食感の変化が楽しい一品。
・魚のフリットに、マリネされた人参・タマネギ・赤パプリカを添えて。
→マリネの塩梅がとても食べやすい。
・鮮魚のカルパッチョ。
→本日は、ハマジとの事で、なかなか馴染みのない種類らしい。
・中央のグリーンサラダ。
→ビネガーの効いたドレッシングが、ミックス葉野菜とよく合う。
メイン
・サワラのソテー。
→肉厚なサワラはふっくらとした仕上がりで、トロトロに煮込まれたナス、フルーツトマト、ズッキーニ、赤パプリカ、タマネギ、ベビーピクルス、粉末パセリを煮込んだニンニクが香る独特のソースと共に頂くとマリアージュにうっとり。付帯のフランスパンと共に、ソースに至るまで美味しく頂いた。
食後のデザート
・口溶けの良いミルクジェラードと、クラッシュナッツとミルクのセミフレッド。キウイと、シナモンコンポートの柿と、ミントと共に。
→いっさいの妥協許さないコースに舌鼓。最後まで美味しくいただくことができた。今回は、珍しくも温かい紅茶と一緒に堪能させてもらった。
入り口掛札には"予約席で満席"と謳われていたが、入店時は私1人きりで貸切状態。誰にも何にも邪魔されずに、店内の心地よいBGMを独り占めできた贅沢なランチタイムを謳歌することができて昼間から夢心地に酔い知れた。口福でありながら、幸福。むしろ幸福とは、口伝いに運ばれてくるものなのかもしれない。
