先日は友人が推していた此方へふらりと。
以前より是非此処へ行ってほしいと
彼の推しホームを教えて頂いていながら
中々来られる機会が無かったクロスケさん。
一推しはミスジだと言っていたのでそれと、
他にも色々頼んでみる。
~マンゴー厚切り牛タン
相当分厚いので火入れは極めて難しいが、
肉汁を全て閉じ込めて焼き上げれば
旨味と甘みのマリアージュが堪らない余韻へ。
ライスと合わせるでも、アルコールとでもと
どのタイミングでも分厚いボディが楽しめるのは良い。
~国産黒毛和牛みすじ
繊細に深く入ったサシにキレのある引き際が特徴的。
ふんだんながらも、しつこさのない牛脂にのった
柔らかく解ける後半の香り立ちは
質の良い飛騨牛だからこその仕上がり。
