名古屋・新守山の「自家製麺フラワー」。キッチンに面したコの字型のカウンター席とテーブル席が２卓ほどと決して広くはありませんが、白を基調にしたシンプルな店舗がどこか新鮮なイメージを感じさせるラーメン屋さんです。
店名に「自家製麺」と謳っているだけあって麺にはかなりこだわっている様子で、スープに合わせて２種類の麺が用意されています。この日いただいた「濃厚しょうゆ」720円には、中細ストレートの純小麦麺が使われていました。
「濃厚しょうゆ」はこの店の一番ベーシックなメニューで、鶏豚ベースのスープにたまり醤油を使った強めのかえしが特徴の、醤油本来の味わいを楽しめるコクの深〜い一杯。そこに国産小麦粉のみを使用した低加水の中細ストレート麺を合わせています。
構成としては極めてオーソドックスな中華そばですが、固めの麺に醤油のコクと旨味が絡んだ味わいはナカナカのもの。思ったほどにはスマートな味ではありませんでしたが、麺にもスープにもこだわりまくりなのがとても良く分かる、レベルの高いラーメンを楽しむことができました。
