この店の存在は承知していましたが当時はまだ開店前でしたので、最近レビューが入った事で開店を知りました。
ロンディネで昼食を済ませパンを買い求めた帰り、ひょっとしたらコーヒーが買えるかもと寄ってみる事に。
３時前に入店するとテーブルを１列に配しアイボリーな漆喰で仕立てた落ち着いたトーンの店内はほぼ満席、唯一空いていた入り口近くの作り付けテーブルの席に案内されました。
カウンターには生豆のビンが並びます。
私は当然のグァテマラを、家内はブラジルブルボン樹上完熟を注文、夫々にチョコレートケーキとプレーンのシフォンケーキをお願いしました。
訊けば豆の販売も行っているとの事でしたので、試しにグァテマラ・ピーベリーとモカ・ナチュラル各２００ｇを注文すると・・・、「お好みの焙煎は？」って、どうやら生豆をその場で指定通りに焙煎してくれる様です。
グァテマラを浅炒りで、モカは中炒りでお願いするとご主人、新たな客のコーヒーを淹れつつも焙煎機から付かず離れず更には不揃いな豆を除きつつ２０～３０分程で焙煎を終え「ご指定より多少深煎りになったかも知れませんが宜しかったらまたご意見をお聞かせ下さい」と。
ザーっと豆を入れガーっと回してザーと袋に詰めてハイどうぞのあの店とはエライ違いだヮ。
店内で飲んだグァテマラの味にどれほど近づけるか後は私達の腕次第なのですが・・・・、自信無いなァ。
家庭的な接客も好印象でした、唯一気になったのはケーキに付いて来た真鍮色のフォークとスプーン、ケーキに金属的な味が重なってしまいますので一般的なステンレス製のものに変えた方が良いと思いましたね。

最近仕事でよくこの店の前を通りますので、初訪の５年前には無かったランチを食べに行って来ました。
１２時過ぎに入店、その後次々に来店客が続きほぼ満席の盛況ぶりです、然もその殆どが女性客でした。
ドリンクとミニデザートが付いたプレートランチ１５９５円を注文、プレートはトードインザホール（ソーセージとヨークシャプディングを焼いたもの）、トマトソースのベイクドビーンズ、ローストビーフ、マッシュポテト、グリーンサラダ、スープに１６穀米と言った内容です。
モーリスと言うくらいですからＧＢメインのプレートなんでしょうが、これ等の味わいに特段のものは無くカフェとしては非常に標準的なものだろうと思います。
ジャンルは違え同じ１５００円なら知多市はsaiのデザート付ランチの料理やデザートの内容の方が遥かにＣＰは高いでしょう。
ま、この店はコヒー専門店ですから・・・・・。
