すずしろの白い身が米の糊をまとって、
コッソリと隠れているあたりへ見当を付け、
箸で探りを入れてみる。
見事に一度で捉えれば上出来で、
うまく逃げられ捕まらなくても、
ほとんど手応えのない箸を口に運んでみれば、
あらためて春めく草の味がしました。

タレは濃い味でツヤツヤです。
脂の乗った、鮮度が良くて強いウナギには、
濃い味でちょうどいいです。
まず一口目、
皮目はサクッとクリスピーな歯応えを返しますが、
もう一度噛むと身と共に柔和にほどけて、
香ばしく焼いた桃のようにトロリと崩れます。
これだけ身の大きなウナギなのに、
皮目が一切ナマ臭くないのはさすがです。
コチラのウナギは直焼きで芳ばしいのに、
仕上がりが柔らかいので歯が弱い年配のファンも多い。
