２０２０年１月２７日（月）のランチで訪問
出張業務のついでに、「井筒亀」を訪問した。冬の香嵐渓になにがあるのだろうかという気もしたが、何組かの客がいた。
猪ホルモン鍋（どて煮）膳１，６５０円（税込）を注文した。猪ホルモン鍋というと野暮ったいが、ジビエというとお洒落な響きになるのが不思議なところだ。
提供された料理は、まさに猪ホルモン鍋であり、郷土料理というものだった。
猟師は獣を手負いにすることはご法度とされている。無用な苦しみを与えないということと、人間に対して敵愾心を持った獣は危険な存在になるということがある。そして、手負いにして走り回ると味が落ちるということもある。内臓は悪くなりやすいので、手負いの猪はホルモン鍋には使えなくなるだろう。
牛、豚にもホルモンはあるが、それほど大きな違いを感じられなかった。
