「我武者羅」に行ってきました。
場所は中通。秋田駅から徒歩圏内。
店員さんの元気っぷりは、さすが我武者羅って感じです。
「コク旨！地鶏中華（煮干し）」700円
スープ
・・・表面にしっかり油膜。アツアツ。
煮干し油でしょうかね？グラインド煮干しも入ってて、熱入れたエグミのない煮干しの香りが充実してます。
油膜の下のスープは、醤油かと。やや半透明スープベース。これも雑味ありません。
コクあって、適度な甘みもイイですね。
麺
・・・角断面中細。粉の密度感じ、この径にしては歯ざわりがシッカリしててGOOD。
粉の香りも良好です。
チャーシュー
・・・肩ロースでしょうか。
肉の旨味しっかり残ってて、甘みとまろみのある醤油ベース調味も上手いです。
適度に柔らかく。
メンマ
・・・枕木で素晴らしいコリシャキ食感。ごま油香る調味もよく。
他1/2半熟ゆで卵、海苔、刻み玉ねぎ、ネギ等。
昼のラーメンは山王時代の「我武者羅」、仁井田の「つねまる by 我武者羅」でも頂いてますが、徐々にレベルアップしていて、もはや本職のラーメン屋の領域に入ったと思いました。
