２号店ができていたので入ってみました。１号店にもしばらく行ってなかったので。
で、メニューを見て、いろいろと実物も見てみましたが、やはり値段以上のクオリティを感じます。
特に赤貝が良く、一般の寿司屋では上物だと１貫で７００円くらいするネタですが、
２貫で１０８円でも想像以上のものでした。このレベルなら飽きるまで何皿でも食べたいです。
１皿当たりの儲けを半分の５４円と仮定して、２貫のネタの仕入れは４０円くらいなのかなと。
涙が出るくらいの企業努力を感じます。
１日に１０００皿くらい出たとしても、仕入れと人件費を除けばほとんど残らない気もしますが、
とてもいいお店でした。
