秋田駅の東口は静かです。その近くのマンションの1階にあるお店。店内は清潔感にあふれ、こじんまりしたプライベートな空間です。
野菜と果物のサラダ。地元産のもちオクラ、その花の酢漬け、梨、水玉、ところてんなど。それに奈良の柿、泉州の水茄子。産地にこだわらず厳選された素材。繊細な味わいです。
キッシュと魚介類。刻んだマッシュルームが入ったキッシュはオムレツのように柔らかいです。魚介類は地元のアナゴ、アワビ、さいまきエビ、青森のウニ。これも控えめなソース。
スープは大葉、夕顔、湯上り娘の大豆、きくらげ。トマトのジュレと梅肉がアクセントになっています。
ひげそり鯛のソテー。身はしっとり、皮はパリパリ。付け合わせの野菜の中では香り高いなめ茸が印象に残りました。
地元産の錦牛とフランス産のフォワグラ。マスタードソースで。アスパラ、スナップエンドウ、サトイモなど野菜が沢山。
パンは２つ。クルミのパンとライ麦パン。温かくて美味しい。
お酒はシャンパーニュ、ブルゴーニュのシャルドネ、ピノ・ノワールをいただきました。グラスですがレベルは高いです。
デザートはカスタードプリン、バニラアイス、ネクタリン。それとエスプレッソ。
どれも美味しいのですが、地元の野菜が一番印象に残りました。素材を活かすように全般的に味付けはあっさり目です。
