本日訪問したのはエッサンス。
エッサンスは、秋田県秋田市手形西谷地に位置するフランス料理店です。
エッサンスは、秋田駅東口から徒歩7分ほど歩いたところに位置する店舗となっています。
エッサンスのオーナーシェフの加藤氏は、四ツ谷のオテルドゥミクニ出身となっており、20年前、フレンチの巨匠 三國氏の命を受けて秋田のノースハンプトンゴルフ倶楽部のシェフとして派遣されたのが秋田暮らしの始まりとのこと。
秋田県は次々に辣腕の料理人がお店を展開するので本当に飽きず面白い県です。
エッサンスでは、秋田の地産地消を中心としたフランス料理を頂くことが出来ます。今回はランチタイムで訪問するところを迷っていると、エッサンスのレビューが一定ほど高かったこともあり、訪問することとしました。
ランチはマックスで3850円とのことで、リーズナブルなそのコースを予約しました。店舗に到着すると、お店はこじんまりとしており、オーナーシェフ一人で運営しているよう。着席し、早速コースがスタート。

甘みが非常にしっかりしたかぼちゃで美味しい

玉ねぎのキッシュ
キッシュはお皿を揺らすとぷるぷる揺れるほどの柔らかさ。食べると生クリームの美味しさを感じ、玉ねぎの風味も出ておりとても美味しい。
