秋田へ出張となりました。
駅近くで食事を探していると、稲庭中華を提供する店がある事を知りました。
以前、福島市にあった『たなつもの食堂』で稲庭中華の麺を食べた事がありましたが、その際に生麺と違ったコシや喉越しの良さを感じでおり、再び食べれる事に感謝♪♪
「稲庭中華そば 秋田本店」さんは、長きに渡って受け継がれている“稲庭饂飩”の技術を用いた“稲庭中華そば”を提供しています。
小麦粉と塩水を練り熟成させた生地を、手綯いして延ばし乾燥させるという製法を取り入れた乾麺は、生麺とはまた違ったコシと豊かな喉越しを生み出します。
注文したのは『味玉比内地鶏中華そば』 850円
スープはかなり熱々でしたので、初めて食べる方は注意してください(^_^;)
比内地鶏の旨味を感じるのと共に煮干しの風味も。てっきり鶏のみかと思っていたのですが、魚介のダブルスープなんですね。
チャーシューはシッカリトした味付けのものが3枚程の入っていました。脂身は控え目で噛む程に肉の味を楽しむことがデキルチャーシューでした。
麺が絶品でした。良質の国産小麦粉を用い、製麺後に2日間かけて干し上げた乾麺は表面はツルリと滑らか。柔らかく感じますが、しっかりとコシがあります。
艶やかさと豊かな喉越しを楽しめる「伝統」と「革新」を併せ持つ逸品です。
メンマは細切りでコリコリとした食感がしっかりとあり美味しい。味玉は少し固茹で、味付けは控え目でした。
このスープだも青物はセリなんかでも面白そうですね。
