スープ
・・・豚骨、鶏ガラ、野菜ベース。背脂浮かせて。
甘み強めが特徴的で、昔懐かし中華そばのニュアンスを感じる味わいです。
キリッとしたスープが好きな方には向きません。
麺
・・・最高級小麦と全卵からなる独自製法だそうです。
中細ウエーブですが、コシというか噛み応えがかなりハッキリとしてます。
食味もなかなか良いです。
チャーシュー
・・・無菌豚のロールバラ。とろけはしません。
普通程度の煮加減。
メンマ
・・・素材そのものの味わいが強めで、好みは分かれるかも。印象クラシカル。
