イタリア料理をとおして秋田を伝える。
これは大曲にあるイタリアン『ジュエーメ （giueme）』のコンセプトだ。大曲といえば花火大会で有名だが、グルメ的な視点で言えば最も有名なレストランはここだろう。秋田の食材ばかり、特に野菜を中心にコースが構成されており、秋田を伝えるテロワールそのものをコースにしているのです。
コースのスタートがその象徴とも言える「前菜と野菜の盛り合わせ」から始まる。味付けは実にシンプルなもので、ほぼ素材の味を堪能させるものばかり。ご覧の通りのたくさんのラインナップも楽しめるなど、質も量も秋田の恵みをしっかり楽しませてくれるのだ。冷製ミネストローネ、穴子のフリット、アカザラガイのパン粉焼き、メバルのカルパッチョ、秋田の銘柄豚のパンチェッタ。その全ての素材が秋田を中心とした東北の恵みばかりで構成。最も印象的だったのは穴子とともに提供されたムラサキヤマドリタケのソース。ポルチーニと同様の芳醇な香りにやられました。これらを取り囲む野菜ももちろん秋田の恵みばかりで、角館産のほおづきの甘味の強さなど思わず目を見開くほどです。

「本日のイタリア料理」
続く一皿もやはり野菜の料理。シェフが変態的農家と紹介するT-FARMより。数種類の茄子が楽しめる一皿で、中央には秋田の豚とハーブで作ったサルシッチャが隠されます。
「季節のリゾット料理」
スープ仕立てのリゾットは、これぞテロワールという一皿。塩のみの味付けで完全の土の味が主役になっております。野菜は蔓紫やオクラやトマト、魚介はサザエが参加しております。
「季節のパスタ料理」
髭付きのヤングコーンと2種類のとうもろこしを使ったフェデリーニ。ヤングコーンの甘さに驚くが、甘い野菜が得意な農家さんなんですと紹介するシェフ達にも驚く。農家１つ１つの個性を料理とマッチングしていってるんですね。素晴らしい。
「メイン料理」
メインは牛でも子羊でもなく、やっぱり比内地鶏。軽やかでクリアな旨味が特徴。皮目の旨味や香ばしさがビビッドに感じられ、カッチャトーラソースがこれに優しく寄り添います。ちなみにこのソース、狩にでた猟師が森で採れるものをあつめて作ったのが由来。これもまた地元のテロワールそのものがソースになっているということですね。
「ドルチェ」
これ、きっとスイカの食べ方の最上位にあるものだと思うんです。秋田県産のチッチェと呼ばれるスイカで、アマレットやライムで味を整えます。アニスとミルクのジェラートや焼き茄子の泡などと重ねて。素材の甘味はしっかりと堪能させつつ、味の深みを上手に作っている印象です。
イタリア料理をとおして秋田を伝えるというコンセプト。しっかりと伝わったことは言うまでもない。
