野原に佇むログハウス。
敷石を一歩ずつ進んで行くごとに訪れる高揚感。
温かみのあるドアを開けば、帰ってきた安心感。
お店の方の笑顔に日々の疲れが解けていく。
ここは秋田県大曲のイタリアン「リストランテ ジュエーメ」だ。
今回で9度目の訪問となる。
魅力は何か。
それは地元の食材への造詣の深さ、そして美味しさを最大限に引き出す表現力だ。
料理を出す際の食材に関する詳細な説明は、秋田の食材をもっと知ってほしいというお店の熱意の表れだ。
また、極力シンプルな調味は秋田の食材を最大限味わってほしいというお店の考えによる。
それらの姿勢はこの日のコース(6600円)にも現れていた。
一品目の前菜のプレートは圧巻だ。
秋田の海と山の幸がふんだんに盛り込まれている。ヒラメのカルパッチョは、ねっとりとした食感とふくよかな甘みが印象に残る。
野菜は季節の山菜がメイン。
素材の美味しさを損なわない、塩のみの味付け。
素材、そして生産者の方々への敬意が垣間見える一皿だ。
この一皿には地元の日本酒「花立」(700円)を合わせた。
名前の通り、華やかでまったりとした甘みとコクのある日本酒だ。主素材の味が際立っているため、お酒もそれに負けないものを選ぶ。
その意味でこちらのお店では日本酒を注文することを強くお勧めする。
料理ではタラの芽と桜海老のトマトソースパスタも印象的だった。タラの芽の芳醇な苦味に、桜海老の香ばしさが相成る。そして、トマトソースの爽やかな酸味がまとめ上げる。季節を感じる一品だ。
また、ホタルイカとコシアブラのリゾットも素晴らしかった。ホタルイカのほろ苦さとコシアブラの瑞々しい苦味の二重奏。角切りされたいちごもホタルイカと相性抜群だ。
お米はT-FARMの田口康平さんが作る無農薬ササニシキで、小粒ながらもサクッとした食感が良い。
この一皿にはやはり地元の日本酒「カゼノオト」(900円)を合わせる。こちらにもT-FARMの無農薬ササニシキが使用されている。すっきりとし、切れ味の良い甘味が感じられる。料理との相性は言わずもがなだ。
最後のデザートまで一口ひと口噛み締めながら、いただいた。
午後の陽光が店内に差し込む。
訪れるのは心地良いまどろみ、そして多幸感。
