仕事の関係で青森市に朝用事があり、その際の朝食に丸倉さいとうさんを初訪問です。朝7時から営業している青森で貴重な朝ラーメンが楽しめるお店です。メニューは中華そばと鳥中華の2種で、鳥中華をオーダー。待つこと数分で着丼です。
スープは鶏の旨味が出た甘さが強めの醤油清湯で、和蕎麦を思わせる甘味が特徴的。鶏だけでなく、煮干も使っているようで、山形の鳥中華をベースに青森テイストを加えたような味わいです。鶏は県産の鶏を使用し、醤油も県産醤油を数種ブレンドしていると以前紹介されていました。和蕎麦チックな味わいなので朝ラーにはピッタリです。麺は中太の手もみ麺で、喉越しよくするすると食べられます。やや柔らかめの茹で加減で、スープとの相性は良好。
具は、鶏肉、三つ葉、天かす、ネギ、海苔。具も和蕎麦よりのラインナップです。鶏肉は2種の部位が入り、皮つきの肉が脂がのっておりジューシーで美味。三つ葉やネギは相性よく、特に天かすがスープと相性バッチリで美味しいです。天かすから出る旨味がスープに厚みを増しているので、天かす増しでオーダーするのもいいかもです。途中で卓上の七味を入れると、味が引き締まりGOOD。そして、食後にお会計。
山形の鳥中華を青森らしくアレンジしたメニューに満足。700円というコスパも素晴らしいですね。どうもご馳走様でした。
