弘前市内の蕎麦屋で、弘前鉄道大鰐線の弘前学院前駅が最寄り駅だが、距離がある。
駐車場は店の前に十分に確保されている。
店内は右に調理場、蕎麦打ち部屋、接続する蔵の客席？、左が椅子席になっている。
蕎麦前をいくらか注文ののちにもりを注文した。
蕎麦は一種類のつなぎの入った挽きぐるみのような感じだ。
水切りは良く、切り幅とのし幅がいくらか異なる。
切りむらや端切れは目立たない。
味と香りは香りはあるが、味がいくらか薄い。
薬味はネギとわさびでわさびは良くない。
辛汁は可もなく不可もなく。
蕎麦湯は濃厚タイプで、風味はあるが十分とは言えない。
蕎麦の産地を聞くと県下で、少量生産される嶽そばと言っていた。
それほど有名な蕎麦でなくても、玄蕎麦を石抜き，みがき、からの自家製粉を行い、蕎麦として提供している。
今回の青森探索で完全自家製粉の店は二件目だ。
東京ではあまり聞いたことがない。
