【所感】
イタリア語で「美味しい食べ物の家」という
意味の此方のお店。
11:50頃に着き、店の前で待っていると
12:00ぴったりにopen。
店内は、モダンシックな雰囲気で、
カウンター6席、個室含めてテーブル3つです。
ご夫婦で経営されており、旦那様の池見シェフは
フランスで腕を磨かれていたようです。
● 自家製マスカルポーネチーズとスペイン産生ハム
→ ヨーグルトの様な滑らかな食感で非常にコクが
あります。ほんのり甘みも感じました。
生ハムもしっとりしていて非常に
美味しかったのですが、スペイン産のハムが
珍しかったので、聞いてみた所、どうやら
今はイタリア産のハムは輸入ストップして
いるよう。感染症が原因で、奥様曰く今後
2〜3年は輸入は難しいみたいです。
● 真鱈 ドライフルーツトマトソースを添えて
→ 一度昆布締めした後に瞬間冷凍することで
旨みを凝縮しています。めっちゃ美味いです。
付け合わせの干し鱈のペーストにはミルクが
入っていることで甘味が加わり、
ドライフルーツトマトの酸味と香りも良く、
至極の1品でした。
● 八戸産の白子 帆立のクリームソースで
→ まず驚いたのが、お皿が温かいこと。
温かい料理ですからね、気遣いが凄いです。
此方も絶品で、白子にイカスミを纏わせ、
その上にアクセントとしてカラスミを。
盛り付けが丁寧で、見てるだけでも美味しいと
思います。
● 焼き穴子のリゾット
→ 穴子の皮目が非常にパリッとした食感に対して
ふっくらした身とのギャップが良いです。
ソースは穴子の骨や赤ワインと煮込んで
出来ており、野菜が入っている為か、
味の深みが凄いです。
付け合わせの菊芋のチップスも良かったです。
● 八戸産の蝦夷鮑を使ったフィットチーネ
→ まず鮑が美味しかったです。
非常に柔らかく、それでいて弾力も感じられ、
鮑肝ソースと上手く絡んでます。
キクラゲも生で、歯応え抜群。美味しいの一言
● 青森県産の猪を使った手延べパスタ
→ 青森県の今別町で育てられている猪を
使った一品。野生で無い為か臭みは無く、
旨みが凝縮されています。
アクセントの銀杏も良かったです。
● 八戸産の太刀魚 青唐辛子のソースで
→ ここはソースがほんと美味しいです。
ブロッコリーのピューレと青唐辛子のソースは
絶品で、アンチョビの様にコクのある味わい。
淡白な太刀魚と相性が合います。
● 青森県産のかも肉 キャベツのチップを添えて
→ こってりしたイメージのかも肉ですが、
赤ワインと焦がしネギで煮込んだソースに
より、サラッと、それでいて食べ応えのある
1品です。
● 紅玉を使ったタルトタタン
→ シナモン風味で、最後まで手を抜いてない
感じが凄い好感持てました。
やはり最後は、青森のりんご。
料理の説明などは奥様が担当して下さったのですが、
非常に丁寧で分かり易かったです。
