千葉の元中心街、蓮池と呼ばれる街の中心にある寿司店です。 何度か訪問していますが・・
GoToPremiumの期限が10日迄だったので、久しぶりに訪問「蓮池 丸万寿司」
飛び込みでランチでしたが、到着すると満席で１０分程外で待って入店。
店内はコロナ認証店の割に隣席との間隔が密で、コロナ対策としてもお勧め出来ません。
こちらは、ここ蓮池で７０年続く寿司店ですが２代目、３代目が銀座久兵衛で修行して継続しています。
但し、仕切っているのは2代目の女将とその他の板さんです。

もずくの味噌汁
まず一口目でシャリの違和感、酢が効いてるのに甘いシャリで炊きも柔らかく何だかおはぎみたい。
それはそれで合うネタも有ると思いますが、今日頼んだネタの一部とは相性が悪かった。
漬け場には３名の板さんが並び、２代目、３代目、中央に店内を仕切ってるその他の板さん。
江戸前の下仕事を感じるネタが無く・・満席なのにそれでは。 ネタはまあまあ良いです。
小肌を仕込んで無い、千葉なのに煮蛤も無い、光り物が殆ど無い
ランチではセット物の安い握りを頼む客しか居ないので、注文にてんてこ舞いでゆっくり食べる雰囲気は有りません。
そんな中、仕事を見てみましたが・・町寿司では無い高級店として、この店は終わってます。
圧倒的に下働きが足りません。 町寿司としては良いのではないでしょうか。
