Vintage with Restaurant is located on the basement floor of the Fuji Building near Chiba Chuo Station. A restaurant that truly embodies a hidden Italian Cuisine and Dining Bar. The inside of the store was spacious, with a bar counter and several stylish tables. This time it's the folding screen in the back? We were shown to a table separated by. The dimness of the lighting and the volume of the BGM are the best of the best for creating an atmosphere. From beginning to end, I was captivated by the bottles lined up on the large bar counter that I could see from the side. This time, I reserved the most popular 7,700 yen course. The beautiful tableware and forks set on the table are all made in Chiba Prefecture, a wonderful touch that shows the love for Chiba. I feel that this is an expression of their concern for local producers. The first dish, Muse, is a stylish plate of cold pumpkin soup, avocado mousse, and salmon pate displayed on a wood-like plate. It was accompanied by balsamic sauce, fig slices, cauliflower and walnut salad, arugula and selvatico, and edible flowers called pentas. A dish that looks like something you'd see at an artistic hotel dinner. The chef's high level of skill and the combination of ingredients, the deliciousness that hits you when you eat it, and the way the sauce plays a supporting role but feels like it's the main character - who are you? I started to worry. LOL Today's pasta was pork and shiitake mushroom ragu. The noodles are handmade tagliatelle. An irresistible dish with the flavor and richness of shiitake mushrooms. It feels like it's always the main dish, but here it's a seafood dish. On this day, it was poiled sea bass and scallops. The sauce I'm interested in is butterbur and anchovies. It also comes with a sauce made from celery root paste, Brussels sprouts and red core radish. This is a dish where all the ingredients were combined to create a wonderful combination.
