諸事情で海外米の勉強がしたく、近場にあったビリヤニのお店へお邪魔しました。
こちらはバングラデシュのお米を使用したメニューを出している珍しいお店です。
カバー写真の通り短粒米である事、コシヒカリ等とは異なりバスマティ米に近い特有のアセチルピロリン香がした為、カリジラ米(チニグラ米)を使っているもの思われます。
米は硬くさっぱりしており崩れやすい為日本米しか食べてきていないとギャップを感じるかもしれませんが、付け合せのスープや肉と合わせるとさっぱりした米と強い香りが素材と調和し非常に好印象です。
その日は常連のお客様が多く、限定メニューを食しているようでした。皆様の話を聞く限り、米と素材とのバランスを楽しみながら食されているようでした。日本米と比較し米自体が非常に軽やかで風味の主張が強い為、付け合わせはそれらを潰さないようにシンプルな香り、かつ味は米飽きしないようしっかり残すようなもの出した。
ビリヤニ自体味わいが多いので単品でも非常に美味しいですが、肉でもサラダでもドレッシングのように馴染む風味だと感じました。
店主にもう少し細かく伺ってみたい所でしたが常連の方との話に入り込む勇気はなく、そのまま帰路につきました。
