をモットーにイケメンシェフがお店を運営されています。
もともとお好み焼き屋さんだったお店を、
鉄板そのままに改装し、オープンさせたのがこちら。
フレンチでは火入れが最重要なので、
鉄板とお鍋orフライパンでじっくり絶妙に火を入れたお料理が楽しめます。
シャルドネを嗜みながら、
シェフにお任せで作っていただきました。
順に、
・トウモロコシの冷製スープ
館山から届く、ゴールドラッシュという品種のトウモロコシ。鳥の出汁と生クリームがトウモロコシのコクと甘みを引き立てる。
・カンパチの3日塩マリネ
カンパチの燻製です。お魚の旨味が凝縮されていて◎匂いもくせになる。
付け合わせはズッキーニ。見ての通り、生のズッキーニです。
・熟成パルミジャーノチーズの焼きたてキッシュ
他のお店のそれよりも卵っぽくなくあっさりしている。ワインのおつまみに◎です。
・田舎風パテ
これが1番気に入りました！
豚肉、豚レバー、鶏レバー、ニンニク、玉ねぎをミンチ、白ワイン等も入れて作っているそう。
寿司屋さんで言うとコハダ的ポジション。そのお店の感覚がわかるものだほうです。
・牛ハラミのグリエステーキ
ハラミの美味しさはともかく、
付け合わせの青丸ナスがとても美味しかった。
口の中でとろけます。
以上、素材にこだわり絶妙な状態でお料理を提供してくれます。フレンチのこと、色々と勉強になりました！
