船橋競馬場駅と大神宮下駅の間くらいで、R14沿いにある洋食屋さんですねｗ
以前から知ってはいるんですが、人気のお店で、小さくて混んでいるのでなかなかいけませんｗ
催事で見かけたのでこれ幸いと寄ってみましたｗ
パン、焼き菓子、コンフィチュールなどを売っていましたｗ
接客はよい感じで特記ありませんｗ
お菓子類の材料は、基本国産ですｗ
ベーキングパウダーはアルミフリーとのことｗ
pommeのパン（プレーン・270円税込）は、プチフランスパン的な丸っこいフランスパンですｗ
クラストは柔らかくやや乾き気味、クラムは水分リッチで気泡が細かめで、
隔壁の透明感はあまり強くありませんｗ
水分リッチなんですが、ボロっとしてぼそぼそとした食感が強く、硬いわけでもないんですが、
粗く感じますｗ
水分リッチな面が活かされてない感じで、ボソボソですｗ
昔ながらのフランスパンとも、現在の先端フランスパンとも異なる、
珍しい印象の粗い感じの独特なパンですｗ
印象としては、すこしドイツパンに近い要素がありますｗ
国産小麦を使っていて、焼きが強くないため、ぼんやりした味のフランスパンになっていますｗ
要約すると、熟練のパン専門の職人さんではない人が、
自分の本職の片手間に作ったパンという感じがしますｗ
フランス産の小麦を使えば、もうちょっとフランスパン的になるかもしれませんが、
経験の多いパン職人さんでも、国産小麦を使ってフランスパンをちゃんと作るのは難しいので、
国産小麦の落とし穴に落ちているような感じですｗ
ただし、目立った風味や味がなく、雑味少なく大きさの割に食べ応えがあるので、
汁気のあるお料理の添え付けのお食事パンとしては成り立つと思いますｗ
また、クロテッドクリームとコンフィチュールを乗せて食べると合うかもしれませんｗ
pommeのパン（バジル・270円税込）は、↑と同じパンで、
バジルの砕片がたくさん入っていますｗ
バジルがストレートにいい面も悪い面もだしており、バジルとパン生地の一体化が感じられず、
たくさんのバジルが浮いた感じがしますｗ
人参のバナナブレッド（351円税込）は、
甘く煮てフルーツのコンポートのようになった人参スライス少量と、バナナが入っていますｗ
生地は、水分リッチのきめ細かいものなんですが、なぜかボソボソしますｗ
こういうパンにバナナをそのままストレートに入れて加熱すると、妙な風味になって、
バナナの味や風味が変質した感じになりますが、そんな感じですｗ
バナナをケーキやパンに入れてバナナを立たせるのは結構難しいと思いますが、
そんな感じですｗ
シェフの本業はフランス料理で、そちらは人気のようですので、
パンのレベルはそれなりでも問題ないと思いますｗ
また、フランス料理の添え付けお食事パンとしては成り立つと思いますｗ
今回買ったものに関しては、こだわりで自らハードルを上げすぎていて、
単独で食べるには、こだわりに味とテクニックが追い付いていない感じでしょうかｗ
