かつて西船橋の国道14号側にあった「隼ホルモン」というお店
以前に足を運び、その美味しさに私の中では「千葉NO1のホルモン焼肉店」と感じていたお店
ただ、普段はあまり足を運ばない西船の地ということや（同地に友達がいない）
コロナの影響などもあり、長く足を運べていなかった同店
その間にお店の方も移転されたそうで、現在は「ホルモン焼肉 はやぶさ」と店名もちょっぴり変わり
同じく西船橋駅の最寄りながら、新たなお店は駅を挟んだ反対側になったとの事
今回縁があり、久々に同店を訪問
メニューに関しては、何を頼んだとして美味しい事は確信を抱いていたので
今回は店主さんお勧めとなる名物3種、加えてタンカルビ、更には牛たん塩らを頂いてみるものとなりました。
■ ホルモン焼肉 はやぶさ名物3種、他
オープニングのビールと共に頂くのは、肉サラダと梅ナンコツ刺し
トロッと柔らかな牛肉と頂くサラダは、すでにもう絶品
ナンコツ刺しもお酒のお供に最高なコリッと食感に甘酸っぱさを兼備
続いて頂く焼肉、まずは牛たん塩にレバーの2品
ホルモンが名物の同店ですが、牛タンだって負けず劣らずの絶品ぶり
綺麗に脂の乗った上にネギを載せれば、想像以上の甘みを広げてくれます
カリッと焼き目をつけた豚レバーは、歯を淹れた瞬間にスッと甘み広がる逸品
カリッと焼かれた外側、中のふんわり食感とコントラストも楽しめ、これまた極上の1品に
続く名物は、隼ミノとはつもとの2品
しっかり焼きあげ、外側はサクッと驚きの歯切れを感じつつ、中からはジュワッと甘みが広がる極上のミノ
はつもともまた、コリッとした食感に脂の甘みが盛り沢山
いずれの部位も、素材の美味しさはもちろん、その調理行程があればこそ味わえる、極上の食感＆旨味を味わうばかり
そんな3大名物に続き、大発見となったのがタンカルビ
三大名物に加え、四大名物と読んで欲しいほど極上の1品になりまして
これはもう「旨味が溶ける」この一言で十分ではないか、といった驚異の美味しさ
更には、ハラミにマルチョウ、シロコロと、絶品各品を堪能させて頂き、〆に頂いたのが「肉茶漬け」
薄切りカットのお肉、ここに出汁を加えていく事で染まるピンク色
出汁に加え、肉の甘みも広がるお茶漬けの美味しさは、究極の〆ご飯
そしてラストは、練乳イチゴの台湾風かき氷
ゴロゴロ入ったイチゴに加え、ミルクをベースとし、フワフワ食感の氷も堪能
大満足、いや超満足を得る絶品ホルモン焼肉を堪能してはみたものの
本日頂いた品でも、まだその魅力全てを語るには届かないほど、気になる品が数多く並ぶ同店
長年ご無沙汰となっていましたが、今後もなるべく足を運びたい
私の中では、やはり千葉NO1と呼べるホルモン焼肉店であることを確信する1食となりました。
