千葉県山武市、同行者とずっとお伺いしたいと思っていたこちらのお店を予約の上、ランチで訪問してきました。
お店が千葉駅からもそれなりの時間がかかる場所にあるからか、予約争奪戦もそこまで激しくなく、１月前に予約できる感じでしたね。
駅から遠いのでタクシーでも良いですし、私たちは時間に余裕があったので、ぶらぶらしてみましたが、本当に何もないエリアです。
お店は結構広く、テーブル席と個室がありまして、我々はテーブル席。
コースはランチもディナーも同じ価格、今回は次の予定もありましたので、飲み物はペアリングではなく、ビールをお願いしました。
メニューに素材が書かれていますが、順番通りでもないですし、掲載していないメニューもでてきますので、あくまでも参考程度に。
地元産へのこだわりがあり、サービスも暖かく、特に女性の方は退店時にお店の外まで話にきてくださいました。素晴らしい。
蛸も吸盤をメインにした品、面白いですし、２品目に出てきたマイワシは、まさに地元食材。
次に私の好きな赤貝も。炭火を随所に使われておりまして、宮崎地鶏炭火焼のような香りが食欲をそそりますが、全体を通して炭火使う場面が少々多く、くどく感じてしまいました。これは宮崎からだからやもしれませんが…
素材も海獲りウナギや真鴨等、地元産のこだわりが強く、それにイタリア食材を織り交ぜながら料理が作られていきます。
多少コース提供時間が長く感じましたが、品数も多いので、満足感は非常に高いものになります。
研究熱心でいらっしゃりまして、あまり他では見かけない調理アプローチも楽しませていただきました。
改装で一時休業をされた後に、新たにリニューアルオープンされるとのこと。現在はリニューアル済ですね。
薪火とかと相性が良いお店だと思いましたので、薪火を実装されるのかも？
いずれにせよ今後が楽しみなお店です！
