山武市にある千産千消イタリアン「ウシマル」
平日のお昼に予約をして伺いました。
駅からは離れ、アクセスはそれほど良くはありません。
素敵な雰囲気の一軒家レストランです。
ウェルカムスペースでは、綺麗な畑や竹林などを眺め、濃厚なほうじ茶を頂きました。
ドリンクメニューもその際に見せてもらえますので、何を頼むかじっくりと選べます。
コースは昼夜一緒で１コースのみ。
天然マガモの出汁のスープと二種のきのこ
上品なコクがあって、豊かな香りです。
最初に温かいスープが飲めると胃にも優しい。
スープよりも温かいきのこの味わいも素晴らしかったです。
九十九里産ハマグリと春野菜
春野菜は、つぼみ菜と豆キャベツ。
野菜の旨味と蛤の出汁が秀逸な、アルデンテのパスタです。
焼き立ての大きなフォカッチャ
外側はカリッとやわらかく焼き上がっていて、
内側はとろけるような食感でした。
お土産でも頂きましたが、相当美味しいです。
九十九里産スミイカのサルシッチャ
生のような甘みと食感を残す絶妙な火入れ。
肝も珍味。
イノシシのモルタデッラ
タカアシガニの出汁が効いています。
イタリアのカステルフリーコとタルティーボ
イノシシのパンチェッタのスパイシーな味わいと野菜の苦味が絶妙。
タコとぬかご
タラの芽の苦みが効いています。
タコの吸盤の食感が心地よい歯切れ。
鯛ノ浦産キンメ
鱗焼きで提供されました。
上質な身質と鱗のサクッとした食感がたまらない。
大豆のソースやシェフ自ら、海水から精製した塩がさらなる旨味を引き出します。
蟹(がざみ)のリゾット
凝縮された旨味が味わえました。
濃厚な味わいの一皿です。
最初に見せていただいたカサゴ
ジャージー牛のカイノミとセンマイも添えられています。
カサゴはさっと自家製塩の湯に通しているということ。
千葉県産の希少なオリーブと檸檬が上品で、豊かな味わいを堪能できました。
山武産網取り天然マガモ
山葡萄と自家製のマスタードソースと、からし菜とマーマレードのソースで。
二種類の部位を食べ比べられました。
山武産ジャージー牛31か月のカイノミ
脂と赤身のバランスが良くて、食感や旨味を堪能できました。
お庭で取れたシークワーサーのシャーベット
木彫りの器で。
お口の中がさっぱりします。
地粉のPASTA
手打ちのパスタです。
やわらかく茹でられていて、やさしい食感です。
ヒラタケの柔らかさとのハーモニーが素晴らしかったですね。
キンメの出汁で旨味も豊。
山武牛乳のDolch
豊かなコクのジェラートとヨーグルト
ハンド焙煎のコーヒー
お腹いっぱい素敵なコースをしっかり満喫できました。
雰囲気や接客サービスもとても素晴らしかったです。
わざわざ行く価値のある素敵なお店でした。
