8年前のレビューです。
今から30年以上前、毎週のように通っていた名店『無味(むみ)』さん。
そこの腕利きだった板さんが始めた『桃介』さん。
大将も、昔と変わらず元気!元気!
カウンター越しの会話も当時から楽しかった。
「まずは、かわ焼から!!」が変わらぬスタイル。
鉄板で焼く今治風焼き鳥です。さらに押さえて焼くことで、旨みを封じ込めます。
当時は、タレと塩を交互に頼んでいたなぁ…。
ただ、現在のかわ焼は、目玉焼を敷いた"桃介風"ですね。
もうひとつ、当時からの私のお気に入りは"手羽先焼"。
大振りで、ジューシーで、たまらない美味しさ!!
永遠に不滅です。
あ～今からでも行きたくなった!!
