『第三の鯛』
全国の鯛の養殖出荷量55%を占める愛媛県。
その数値はもちろん全国一だ。
いわゆる県民に愛されている食材
それは試行錯誤と淘汰が繰り返され洗練される。
なんと言っても愛媛は鯛めしだ。
筆頭は南予の鯛めし
刺身を出汁醤油と卵黄で混ぜ
オンザライスでざぶりとやっつける
贅沢な卵かけご飯のような鯛めし。
第2は定番 中予で愛される
炊き込みごはん
旨味が奥ゆかしい鯛めしだ。
そして今回見つけたのが今治のこれ。
鯛の押し寿司。
木箱を開くと艶めかしく白い鯛の素肌。
透けて見えるのは静脈ではなく彩りの大葉。
JR今治駅構内の食堂は駅弁も取り扱う「二葉」の作。
置かれた時間にもよるのだろう
鯛の魅力は酢飯に託されて鯛にはチカラが残らない。
しかし旨味は渾然一体
噛みしめるごとに穏やかに押し寄せる。
拡がりはしないが淘汰もされない。
第三の鯛にはもうひとつ何かが足らぬ。
でもなにかが見つかれば、と思わなくもない。
駅弁お取り寄せ全国一位を取ったことがあるそうだ。
