越前市の今立地区といえば、越前そばの本場。この地域は美味しいそば屋さんが目白押し。
本日2軒目は森六さん。
製粉してる作業所と隣接した広めの駐車場から歩いてすぐ。
左手の暖簾が迎えてくれます。
店内は4つに仕切った丸テーブルと小上がり。
メニューは4種のみで、自家製粉のそばは「せいろ用」の十割と「おろし用」のやや太めの二八そばの2種類。
注文したのは10食限定の十割おろしと二八おろしそば。
そばは心もち太めの平打といった感じ。
弾力があり、噛んで味わう越前そば。
おろしはやっぱり十割より二八の方が旨味を感じる。
これはそばの打ち方、二八だけど若干太めにすることで滑らかさと噛んだときに風味を感じやすい。ダシものりやすいし。
辛めの大根おろしと甘めの醤油だしをあわせた出汁のバランスがいい。
がっつくと辛さがこみ上げてくるので注意。
今度はスペシャルせいろにチャレンジしてみたい。
