敦賀で食べられる黒い蕎麦は、いわゆる越前そばで、蕎麦殻ごと挽くのが特徴です。真っ黒な、あまのさんのは典型的なそれです。
一番粉を使う白い蕎麦ー更科ーに比べて、弾力はないですが、蕎麦の風味は圧倒的です。
こうした黒い蕎麦は全国にあって、例えば、北海道の音威子府蕎麦は、さらに真っ黒です。他県でも、田舎そばという名前で売られているのは、どこもこんな感じです。
あまのさんのは、看板に純蕎麦とありましたが、越前そばの冷凍蕎麦でした。
腰はないものの、蕎麦の味は強めでした。駅そばとしては、美味しいほうかと思いました。冷たい蕎麦のが合うでしょう。
コスパも良いです。
