博多で絶対食べたいものがありました。そうです、水炊きです。キャナルシティそばの「博多水たき濱田屋 本店」さんへ初訪店。
店内は明るくて清潔感ありますねぇ。どんどん期待が高まって行きます。
まずは水炊きのスープだけ頂きます。思っていた以上にアッサリ。店員さんが言うには、この後いろんな具が入る度にどんどん味が濃くなっていくそうな。ホントかなぁ〜？
店員さんが鳥肉を取り分けてくれます。そこに注ぐのは「橙酢醤油」。これが乙なんです。
スッキリして爽やか。嫌味のない柑橘の酸味がクセになります。恐るべし、濱田屋本店。
軟骨入りつくねも店員さんが作ってくれます。こいつからも出汁が出るんだと。つくねを食べ終え試しにスープを飲んでみると…うわっ濃くなってる！
最初のスープより格段に旨いですね。
野菜を頂いた後に、店員さんが雑炊を作ってくれますが、これが一転してサッパリ仕上げ。野菜の出汁のおかげですねぇ。
恥ずかしながら、ちゃんとした水炊きって食べた事ありませんでしたが、こんなに奥が深かったんですね。大変勉強になりました。
