I had heard about it, but this was my first time trying aged meat. By aging Cow tongue, the taste and texture become completely different. It feels like the flavor is increasing. I ordered it as a course, so I enjoyed various parts of aged meat as shown in the photo. The aged taste is like enjoying the taste of lean meat. However, the sabuton with a side was delicious (lol) and I enjoyed it as it went perfectly with rice and beer. Thank you for the meal.
