博多に美味しいお鮨屋さんがあると料理人さんから紹介されましたので訪問しました。
今回頂いたお料理は以下です。
[摘み]
・ 鱈白子 湯びきポン酢
生臭さは感じないが少々化学的な後味を感じます。
・ 鯛
身はしっかりとしていて歯触りも良いが旨みをもう少し強く感じたい。
・ 蛸
関門海峡で採れた蛸との事。旨味は溢れんばかりで香りも良いですね。美味しい。
・ 泥障烏賊
九州で頂く烏賊は本当にどこでも美味しいですね。
・ 鰆
味を十分に楽しめます。
・ 鮪
塩釜産 124.6kgの鮪です。築地(豊洲)の石司から仕入れているそうです。
