西鉄グランドホテル１階の直営レストランです。西鉄さんですから場所の説明は不要ですね。
天神から徒歩３分の中心で利便性の高いホテル。今年で５０周年だそうです。
という事でアニバーサリー記念のシャンパンディナーに行ってきました。
スタッフの連携の流れは決してスムーズではありませんが手作り感のある運営で言葉や動きが丁寧で高いホスピタリティを感じます。気持ちが良いですね。
今年から調理長が代わったそうですが路線は踏襲との事、上品でイマ風の料理です。
印象的だったのはサーモンの料理。コンフィとメニューにあったが素材自体はわずかにオイルを使ってわずかに火を通したもので生にに近い味わいでした。これに緑色のマスタードソースがサーモンの脂と見事にマッチした。アクセントのキャビアが塩味を効かしてなかなかのセンスを感じました。
フォアグラのテリーヌも悪くなかった。ソーテルヌに合わせるような濃厚で凝縮感のあるものではないが、添え物の酸味とのバランスが良い、フルーツを小さくカットして添えた工夫は座布団１枚！フォアグラを軽快で爽やかなものにした。分量もやや多めだがシツコクない。同時に提供されたシャンパンも良かった。ドサージュが１８g程度あるSEC表示で、あたりが柔らかく、フォアグラ自体との相性を楽しめました。なによりも料理が丁寧、労力を惜しまず細かい盛り付けを綺麗にこなすシェフの真面目な性格を感じる。
デザートはパティシエールに説明していただきました。シェフ同様に細かく綺麗な盛り付けであったが、ソースがつけにくく濃度が薄く感じるように思いました。バランス的にジェラートが少ないようにも思いました。
総じて料理はとても美味しいし、サービスが丁寧であると感じた。これからますます期待できると思います。
