辛辛つけめん
東京の「井ノ庄」にて修行し
九州で開店と何かで読んで興味はあるも
メニューもほぼ一緒で福岡迄来て食べなくてもいいかと思ってましたが予想を覆されました
まず接客が熱い
丁寧で心遣いを感じ情熱を感じさせてくれます
各席にエプロンがあるなど配慮もよし
卓上調味料も煮干し酢や刻みニンニクなどサービスが嬉しい
つけ麺の見た目の違いは
刻み柚子が表層にあるくらいでしょうか
肝心の味については方向性はそっくりですが
濃さが違います
ドロリとしていて動物系の濃度が高いです
井ノ庄も昔は濃い時期もありましたが最近はサラリとしており
正直こちらの方が好みです
また魚粉もこちらのはあまみがあり
辛味と魚粉のあまさの混濁は面白くなっています
行列の理由が分かりました
