食べ過ぎた!
ほんなこつ、美味かばい!
と思わず、下手な博多弁が飛び出す程美味しい。
西鉄平尾駅近く、高砂の住宅街にある「とりなべマルニ」
なぜ、水炊きでなく「とりなべ」というのか?
水炊きとは、まさしく、水から煮込で鶏肉から鶏だし抽出し、ポン酢しょうゆ、薬味で食べるその調理法が名前の由来です。
特に博多水炊きは、水分の出にくいキャベツを使用し、鶏肉本来の味をインパクト強くしているらしい。
ここは、鶏がらを砕かず一日かけて煮出した天草大王をお出汁で食べるので、とりなべと言っているらしい。
先客無し、オープンと同時にお邪魔。
常連さんに連れてきてもらったので、すべてお任せ。。。
手前のテーブル席ではなく、奥の掘りごたつ席に通される。
ともかく、いっぱい頼んだ…
で、食べるのに忙しく、鳥刺ししか写真取れていなかった⤵ 残念。
何を食べたのかと言うと、
●鶏刺の盛り合わせ(タタキ、ササミ、レバー、砂ズリ、ハツ)
・熊本の地鶏、天草大王を使用、弾けんばかりの肉質、ほかの肉では味わえない弾力のある歯ごたえ、新鮮な肉色
・臭みとか全くない、旨味が絶品。
・なんか新鮮過ぎて、肉片が輝いて見えたくらい…
●自家製鶏レバーバケット付き
・濃厚レバー味がバケットを引き立て、ガンガン行っちゃいます。
●とり天
・天草大王だけに、肉質がいい、衣もカラッとしている
●刺身
・どこに行っても、あれば注文してしまう「ゴマサバ」もやはり、博多でしか食べれません。プリップリッでした。
●とりなべ
・スープは鶏だけのスープを飲み慣れていたので、ネギ混入だったので想定外だった、
野菜ありでもコクありの味わいだった。
下処理の成果なのだろう極めてクリアな黄金色だった
鍋は店員さんが最後まで仕上げてくれるので楽ちん。
華々しく投入するツクネ団子は特に美味。
柚子胡椒をちらしながら食べるのが博多スタイル…
途中、鶏肉のシャブシャブありで、絶句。
●おにぎり
食べました。美味しかったです。
次回、来福時、水炊き「長野」にするか「マルニ」にするか、悩みます(笑)

I bothered you again. ●Assorted chicken sashimi (heart, liver, sand sashimi, fillet) ・Amakusa Daio (Kumamoto prefecture) has perfect elasticity. This time, even though it was fresh, the crunchy sand was irresistible. Chicken sashimi is the best because you can eat and compare different types of small parts. ●Comes with a homemade chicken liver baguette ・The fragrant and rich liver paste was served alternately with the famous fried chicken ●Torikara ・Amakusa Daio is marinated in soy sauce, ginger, and garlic and deep-fried until crispy, giving it an outstanding softness ●Torinabe ・Drop the chicken dumplings into the rich white soup. Ramito, an international student, takes the job seriously. The golden soup is ready. I like the Beatles in the BGM... I didn't really feel it last time, but they do it very carefully and with great taste. After tasting the chicken dumplings and soup, I finished with Nankan-age → Nanirofu → cabbage → white onion → thigh meat. Nankan-age has a fluffy and juicy texture that soaks up the soup stock and water easily. Thinly sliced Amakusa Daio thigh meat, shabu shabu...Thank you "Lamito" ・To finish off the meal, I was full and satisfied with the rice crackers.As always, it was a delicious "Torinabe" feast. ------------Nankan-age------------ This is Kumamoto's Local Cuisine, deep-fried tofu, but it is made with as little water as possible compared to regular ones. Because it is fried, it has a low moisture content and can be stored for a long time. Lasts for about 3 months at room temperature. It's a name that doesn't lose its flavor, and it's been a while since I've had it.
