出汁は上品で美味しいのだが、
料理自体は薄味で "素材そのものの味の魅力"を引き出している。
素材の本来の味を引き出すスペシャリスト。
野菜や、魚など、地産地消にこだわっていて本来は一から自分で作りたい位だそう。
「今の人達は添加物だらけの味しか知らない。これを変えていきたい。」
