白木の長いカウンターはイチョウだそうだ。それを半ばで繋いであるという。カウンターの目の前に広がる銅板の装飾壁は塗った薬品の具合で時とともに色の変化が楽しめるそうだ。木製の冷蔵庫といい美しい前庭といい、内装も外装もどこも手が込んでいて初期投資の意気込みを感ずる。
では、料理はどうか。
先付けの大根が柔らかく出汁が染みていて美味い。刺身で供されるトロは口に含むと溶けてなくなった。鱈の白子焼きは臭みがなくクリーミー。茶碗蒸しにはカニの爪が隠れていた。ああ、熱燗がどんどんなくなっていく。
握りでは雲丹は香り高く、海苔に包んで手渡しで頂く趣向が新鮮。車海老は身が分厚くしっかりしていてその食べ応えが嬉しい。ふわりと握られたシャリのほぐれも良い。
総じて柔らかくあるべきものは想像を超えて柔らかく、歯応えを楽しむものは歯触りが素晴らしい。計算が行き届いている印象だ。
最後にデザートとして出てきたオレンジ類は、ゼリーかと思うほど果実がしっとり柔らかく、一番驚かされた。
満腹感とコスパ、文句なし。ご馳走さまでした。
