Today's appetizer was a lobster mousse with moist tiger prawns at the back of the plate, gently wrapped in antibes (chicory) at the front, and accented with raw sea urchin and lovely spikes of shiso. Italian truffles accompany the asparagus. The buds of black cabbage are subdued with the bamboo shoots that make you feel the budding of spring. Tagliolini flat noodles are made with strong flour from Fukuoka Prefecture, with love for the local area. The firefly squid from Hyogo also has a pleasant smoky aroma and a plump texture. As Gelato made with Jersey milk and honey went down my throat and I savored a moment of bliss, my companion smiled and said, ``This will keep me going for six months.''
