A precious Izakaya (Japanese-style bar) in Minami Ward
I thought it was hopeless to find a soba restaurant in Minami Ward, but it was dark under the lighthouse, so I found it unexpectedly close (or rather, I was able to do it). Plus, it's easy to stop by on my way home from work. If you look at Google Street View, there are other stores as of March 2020, so it seems new. The homepage will be launched in late summer this year, so maybe around that time. Since it's only open in the evenings, it seems like it was missing from search results (it's a pity that the previous store there was also a very unassuming store). I entered the store around 7 o'clock in the early evening. When I sat down at the counter, I noticed the menu of Katsukoma and today's recommended white shrimp kakiage, but when I asked about it, it didn't seem to have anything to do with Toyama. by chance. Before the soba, I ordered two sakes, ginkgo (260 yen), and maitake tempura (400 yen). I feel like I still have a long way to go in terms of my Tempura skills, but since the price is low, I don't think I have any complaints. To finish off my meal, I ordered one plate (750 yen). Boil for 35 seconds. Slightly flat soba noodles with a smooth surface. The scent of soba is modest. The soup is poured directly into the soba choko and served. The smoky aroma of the dried bonito flakes stands out, and the sweetness is modest for Fukuoka, which is good. The concentration is moderate. The condiments are a commercial-grade tube of wasabi and finely chopped green onions. The delicateness of the green onions stands out, but it's a shame that it's been a while and has lost some of its freshness. If you don't ask for soba-yu, they may not serve you. A rich type that you can go out of your way to prepare. Perhaps because it's the weekend, customers seem to be coming and going all the time. Although it is not without its complaints, it is a rare soba Izakaya (Japanese-style bar) in this area. I'm honestly happy that there's a soba restaurant nearby, and I'm sure I'll come back again.

このあいだ、バスを待つ時間のコンビニで、ぱらぱらとめくったFM福岡が出している『福岡の蕎麦』に、こちらが紹介されていた。
開店当初、一度伺ったきりだったが、それから4年経つ。
店先を通るたびに、そこそこ客は入っている様子で、コロナ禍を生き延びただけでもりっぱである。
前回は、まだ蕎麦切りのできなど発展途上かと思われたので、4年後のすがたを確認しに寄ってみた。
突き出しは、鶏もも肉の冷製で、突き出しとしては充実したつまみである。
メニューには仙崎かまぼこの板わさ、有明の初摘み海苔など、わかっていらっしゃる、という蕎麦前が並ぶ。
蕎麦前の肴に次の二品を注文した。
鯛のワタ
出来合いの塩辛である。
サクラエビかき揚げ
期待していたわけではないが、サクラエビは遠くにかすみ、由比の浜のかき揚げの味を知っていると物足りない。
結局、突き出しの内容が一番良くて、肴の選択には失敗したようだ。
最後に、もりを大もりで。
蕎麦切りは、まさに伝統江戸前蕎麦の風格で、教科書通りの切りべら23本のなめらかな細打ち。
さすがに4年して、技は完成したかというように見受けられる。
蕎麦汁もよくできていて、できすぎて既製品のようだ。
完成形はそうなるのかもしれないが、ちょっと面白みに欠ける感じではある。
粗挽き太打ち好きの自分としては、正直なところ好みの方向性は違う。
職場に近くて、帰り道にちょっくら寄りたいところもあるが、少し敷居が高いかな。
