2008年京都で創業し2015年店主の故郷福岡に移転。2022年食べログ百名店に選出される。福岡市早良区藤崎と言うと早良区の区役所があり、隣町の西新は修猷館高校や西南学院と教育機関が集まる文京地区で、この藤崎も飲み屋街、歓楽街や商業とはちょっとかけ離れた住宅エリアである。そんな藤崎の駅から住宅街方面に歩いて5〜6分の立地に「捏製作所」は店を構える。丹念に捏ねられた自家製の「つくね」はその味、旨味、食感と秀逸であることは間違いない。他にも創作和食の類のおつまみは酒飲みを唸らせる。美味しい捏(つくね)いただきました。ご馳走様でした。
