Izakaya (Japanese-style bar) in Nishijin that mainly serves chicken. Ramen is served for lunch. Visited during lunch time. ~Order~ Chicken, sea bream, and clam salt Ramen 1,050 yen Since it is a one-off shop and not a specialty store, it seems that they can only make two bowls at a time. Be careful if you don't have time. The clear, golden-brown soup is apparently made with chicken, sea bream, and clams, but...the flavor is centered around the flavor of the sea bream, with a hint of the flavor of the chicken. I could smell the strong aroma of sea bream fat, so I wonder if the soup stock is made from raw sea bream rather than sea bream... Maybe it's just my tongue, but I couldn't really taste the clams. The salt content is so low that it's delicious even if you drink it as a soup, but the strong flavor doesn't leave you feeling unsatisfied. The noodles are ultra-thin straight noodles with added water. It went well with the light soup and had a nice smooth texture. The toppings are chicken char siu, rare pork char siu, menma, green onion, and wakame. Everything was finished to a high standard. At 1,050 yen, it's relatively expensive by default, but it's a high-quality bowl that you wouldn't expect from an Izakaya (Japanese-style bar) Ramen. I would like them to open a specialty store.
